Kansas City College Student Opens Mexican Seafood Restaurant On Southwest Boulevard

Kansas City’s Southwest Boulevard has a new culinary gem thanks to the entrepreneurial spirit of Noelia Olivares, a college student at the University of Missouri-Kansas City (UMKC).

Born from her passion for authentic Mexican seafood, Mariscos Mr. Culichi started as a food truck and has now become a thriving brick-and-mortar restaurant.

Here’s a closer look at this inspiring journey and the restaurant’s unique offerings.

A Passionate Beginning: From Food Truck to Restaurant

Mariscos Mr. Culichi began in 2020, during the COVID-19 pandemic, when Noelia Olivares graduated from high school. Inspired by her stepfather’s Sinaloa-style seafood dishes, Olivares turned her family’s recipes into a profitable food truck business in Independence, Kansas.

With overwhelming support from the community, the family transitioned to a permanent location at 910 Southwest Boulevard, which officially opened in December 2023.

Revamping a Classic Space

The restaurant’s interior was transformed to reflect its coastal roots. Walls adorned with phrases like “En El Mar La Vida Es Más Sabrosa” (Life is more flavorful at sea) and oceanic murals bring the sea to Kansas City.

These visual touches, combined with the warm hospitality, create a dining experience that feels authentic and inviting.

A Diverse and Authentic Menu

The menu at Mariscos Mr. Culichi is a celebration of Mexican seafood, offering dishes that highlight fresh, made-to-order ingredients.

Overcoming Challenges

Maintaining the quality and customer service that defined the food truck has been a priority. The family’s hands-on approach ensures that every customer enjoys a high-quality meal.

With plans to introduce breakfast items and operate the food truck for special events, Olivares is committed to expanding the restaurant’s reach while preserving its core values.
